Chinese Sticky Tofu & Red Peppers

A perfect dish to enjoy on the weekend as a delicious vegan #fakeaway and it only take 15 minutes! Quick & Easy!

Serves 4

Ingredients

400g firm tofu, cubed into small pieces
1 tsp corn flour (or gluten free or tapioca flour)
1 inch fresh ginger, grated
1 red pepper, deseeded and diced
1 green pepper, deseeded and diced
1 tsp truffle oil (or 1 clove garlic if desired)
1 tbsp sunflower oil
1 veggie stock cube melted in 1/2 cup hot water
1/4 cup pineapple chunks and 1/4 cup pineapple juice
1 small red chilli, deseeded and finely sliced
1 tbsp tomato ketchup or tomato puree
1 tbsp soy sauce (tamari or Braggs)

Method

  1. In a bowl coat the tofu in flour.

  2. In a deep large frying pan add the oils and cook tofu until golden.

  3. Add the peppers and saute for 5 minutes.

  4. Add in the ALL the rest of the ingredients and mix until the sauce thickens and take off heat.

  5. Serve with Jasmine rice (cooked with frozen peas is tasty)!

  6. Garnish with fresh coriander leaves and sesame seeds.
