Chocolate Chickpea Cookies
These are truly delicious and spectacular cookies when looking for something nutritious yet sweet, satisfying and filling.
Makes approx. 8-12 cookies (depending on size)
Ingredients
1 can chickpeas, drained (keep brine to make meringues and mousses)
4 tbsp peanut or almond butter
2-4 tbsp maple syrup (depending on how sweet you like your cookies)
2 tbsp dark chocolate chips/nibs or grated
Pinch of sea salt
1/2 tsp baking powder
1/2 tsp baking soda
Optional extras:
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 tbsp cocoa powder (if you want a truly chocolatey cookie experience)
- 1 tsp orange extract to make this a ‘chocolate & orange’ cookie variety
Method
Pre-heat oven to 180C
Add all the ingredients to a blender/food processor until the mix comes together
Lay out a sheet of baking paper on a baking tray
Using a spoon or ice cream scoop, scoop out as many balls as you can from the mixture and flatten down with the back of a spoon
Bake in the oven for 10-12 minutes
Enjoy warm or leave to cool to enjoy later (if you can wait that long)!
