‘Feta’, Tomato & Pasta Bake

This is such a simple and delicious meal to cook up in no time, as well as being so tasty!

Serves 4

Ingredients

1 block of ‘feta’ (I use violife)
2 cups of cherry tomatoes
1 cup fresh basil
Dried oregano
Salt & pepper to taste
Olive oil to drizzle
1 can of your favourite beans, drained #plantbasedprotein
4 cups of your favourite dried pasta

Optional additions: 1 cup mushrooms, sliced and sautéed for 5 minutes in a little olive oil

Method

  1. Pre-heat oven to 190C/380F

  2. Boil up some salted water and add pasta. Cook until al-dente (approx. 20 minutes). Drain and leave to one side

  3. In a baking dish add the basil to the bottom of the dish, top with the ‘feta’ and spread the cherry tomatoes around the dish

  4. Drizzle with olive oil and add salt, pepper and oregano to taste

  5. Bake in the oven for 20 minutes

  6. Add the pasta & beans to the baking dish, mix up all the ingredients and return to the oven for a further 10 minutes

  7. Serve with a green salad
