‘No-Bake’ Apple Crumble Yoghurt Pots

I know many who try to eat ‘lighter and healthier’ and as the weather starts to become warmer, this is the perfect recipe to enjoy when your sweet tooth craving kicks in.

Serves 2

Ingredients for the yoghurt ‘cream’

2 cups plant-based yoghurt (I use Oat plain yoghurt by Oatly)
2 tbsp maple syrup
1 tsp vanilla essence

Ingredients for Crumble mix

4 Lotus or ginger cookies
2 tbsp oats
2 tbsp walnuts
1 tbsp maple syrup
Pinch of cinnamon powder

2 apples, peeled & cored & grated
2 tbsp of dried fruits (vine fruits work well) (optional)

Method

  1. In a food processor, mix all the crumble mixture until they become crumbs but not too fine (literally blitz the ingredients for 2-4 seconds). Once blended add the vine fruits (do not mix any further).

  2. In a mixing bowl, mix the yoghurt cream ingredients together.

  3. In a serving bowl or nice glasses, start to layer the mix a) yoghurt b) apple c) crumble mix d) repeat ending with a top layer of crumble mix.

This can be enjoyed for breakfast, dessert or a healthy snack.

This dish is really versatile and you can use any fruit you like (fresh, frozen or pureed), any grain (oats, tapioca, brown rice, millet, quinoa), nut butters and nuts & seeds of your choice.
