Polenta Veggie Bake
Recently, a friend visited us from the States and made this dish, which I fell in love with. I learnt how to make it, played around with the ingredients and created this delicious and wholesome dish for you to enjoy.
Serves 6
Ingredients
1 pack ready made Polenta (500g)
1/2 cup soya mince mixed with 1 cup hot water, leave to one side OR 1 cup ready cooked green lentils
A variety of vegetables you love and/or need to use up: 1 aubergine, 1 courgette, mix peppers, 2 medium potatoes,
Serves 4-6
Ingredients
1 pack ready made polenta (500g)
2 medium potatoes peeled washed and sliced half inch thick
2 large beef tomatoes or 4 medium vine tomatoes washed and sliced
4 portobello mushrooms, peeled and sliced in half lengthways
Mixed peppers de-seeded and sliced
* You can pretty much add whatever veg you like and have (aubergines courgettes onions etc)
1 cup vegan cheddar cheese
1/2 cup vegan parmesan, grated
Sauce ingredients
1/2 tomato passata
2 tbsp tomato purée
Mix with a little hot water to make sauce
Spice ingredients
2 tsp cumin
2 tsp smoked paprika
Pinch of turmeric
Add more spicing of your choice of desired
Salt and pepper to taste
Method
Pre-heat oven to 180C
In a large frying pan, sauté veg one layer at a time in a little oil to simply brown (2-3 mins on each side)
Once sautéed start to layer veg in baking dish adding a sprinkling of spices and cheese on each layer
On final layer add Parmesan and bake in oven at 180c for 30 mins covered with baking paper
Take baking paper off and bake for a further 10-15 minutes to brown the top
Serve with salad and a balsamic olive oil dressing
