Pumpkin & Pecan Cake
Ingredients:
For the Cake:
1 3/4 cups self-raising/all-purpose flour or gluten free self-raising flour
1 1/2 cups pumpkin puree (canned or homemade)
1 cup brown or coconut sugar
1/2 cup unsweetened almond milk (or any non-dairy milk)
1/3 cup coconut oil, melted
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
2 tsp apple cider vinegar
For the Pecan Topping:
1/2 cup pecans, chopped
2 tbsp brown or coconut sugar
1 tbsp vegan butter, melted
For the Frosting:
1/2 cup vegan cream cheese
1/4 cup vegan butter, softened
2 cups icing / powdered sugar
1 tsp vanilla extract
Method
Preheat your oven to 180C/360F. Grease and flour a round cake pan or loaf tin.
Prepare the Cake:
a. In a large bowl, whisk together the pumpkin puree, sugar, almond milk, vinegar, coconut oil and vanilla extract until smooth.
b. In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
c. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not over mix.
d. Pour the batter into the prepared cake pan and spread it evenly.
Prepare the Pecan Topping:
a. In a small bowl, mix together the chopped pecans, brown sugar, and melted vegan butter.
b. Sprinkle the pecan mixture evenly over the cake batter.
Bake the Cake:
a. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the centre comes out clean.
b. Remove the cake from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Prepare the Frosting:
a. In a medium bowl, beat the vegan cream cheese and softened vegan butter until smooth and creamy.
b. Gradually add the icing/powdered sugar and vanilla extract, mixing until the frosting is smooth and well combined.
Frost the Cake:
a. Once the cake is completely cool, spread the frosting evenly over the top of the cake.
b. Optionally, garnish the frosted cake with additional chopped pecans.
Serve:
