Pumpkin & Pecan Cake

Ingredients:

For the Cake:

  • 1 3/4 cups self-raising/all-purpose flour or gluten free self-raising flour

  • 1 1/2 cups pumpkin puree (canned or homemade)

  • 1 cup brown or coconut sugar

  • 1/2 cup unsweetened almond milk (or any non-dairy milk)

  • 1/3 cup coconut oil, melted

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 1/2 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp ground nutmeg

  • 2 tsp apple cider vinegar

For the Pecan Topping:

  • 1/2 cup pecans, chopped

  • 2 tbsp brown or coconut sugar

  • 1 tbsp vegan butter, melted

For the Frosting:

  • 1/2 cup vegan cream cheese

  • 1/4 cup vegan butter, softened

  • 2 cups icing / powdered sugar

  • 1 tsp vanilla extract

Method

  • Preheat your oven to 180C/360F. Grease and flour a round cake pan or loaf tin.

    Prepare the Cake:

  • a. In a large bowl, whisk together the pumpkin puree, sugar, almond milk, vinegar, coconut oil and vanilla extract until smooth.

  • b. In a separate bowl, combine the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.

  • c. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not over mix.

  • d. Pour the batter into the prepared cake pan and spread it evenly.

  • Prepare the Pecan Topping:

  • a. In a small bowl, mix together the chopped pecans, brown sugar, and melted vegan butter.

  • b. Sprinkle the pecan mixture evenly over the cake batter.

  • Bake the Cake:

  • a. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the centre comes out clean.

  • b. Remove the cake from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  • Prepare the Frosting:

  • a. In a medium bowl, beat the vegan cream cheese and softened vegan butter until smooth and creamy.

  • b. Gradually add the icing/powdered sugar and vanilla extract, mixing until the frosting is smooth and well combined.

  • Frost the Cake:

  • a. Once the cake is completely cool, spread the frosting evenly over the top of the cake.

  • b. Optionally, garnish the frosted cake with additional chopped pecans.

  • Serve:

    • Slice and serve the vegan pumpkin and pecan cake, and enjoy this delightful autumn treat!
