Rice

Rice is one of the most versatile starches, it's inexpensive and pairs well with many ingredients.

Both brown and white rice are a great staple to enjoy and can be recreated to enjoy in many delicious dishes or as an accompaniment, from savoury to sweet, from hot and cold.

However, rice has become a little controversial over the years as its popularity has grown.

Uncooked rice can contain spores of Bacillus cereus, bacteria that can cause food poisoning. The spores can survive when rice is cooked. If rice is left standing at room temperature, the spores can grow into bacteria. These bacteria will multiply and may produce toxins (poisons) that cause vomiting or diarrhoea.

Here are some tips on the best way to enjoy rice:

  1. Wash the rice a few times in cold water, until the water becomes clear. This gets rid of ‘dirt’ and extra starches.

  2. Ideally, serve rice as soon as it has been cooked.

  3. If that is not possible, cool the rice as quickly as possible (ideally within 1 hour). The best way to do this is to put the rice in a container, spread it out evenly and let it cool down.

  4. Keep rice in the fridge for no more than 1 day until reheating.

  5. When you reheat rice, always check that it's steaming hot all the way through.

  6. Do not reheat rice more than once.

  7. You can enjoy the rice once it has been fully cooled down in salads and in dishes such as sushi.
