Spinach and Yellow Lentil Dahl

This is a super easy dish to create, although depending on the lentils/split peas you use, it can take a while too cook, so soaking overnight will speed up the process.

Serves 4

Ingredients

1 cup yellow lentils
2 cups spinach/mixed greens
1/2 tsp turmeric
1 inch fresh ginger, grated
1/2 inch fresh turmeric, grated (wear gloves as turmeric can stain fingers) or use 1/2 tsp dried turmeric
1 tsp black mustard seeds
1 tbsp coconut oil
1/2 tsp truffle oil
1/4 cup fresh coriander
1/2 fresh small red chilli or pinch of dried chilli flakes, finely sliced
1/4 tsp sea salt

Method

  1. Soak lentils overnight in cold water

  2. When ready to cook lentils, rinse with fresh cold water and add to a medium size sauce pan and add 4 cups of cold water along with the fresh ginger and turmeric

  3. Bring water to boil and turn heat down and simmer the lentil gently until cooked

  4. Once lentils are cooked and salt and mix

  5. Then add the greens, put lid on and gently cook

  6. Once the lentils are ready, in a frying pan add the coconut oil, chilli and mustard seeds and fry until the seeds start popping

  7. Add to the lentil mix

  8. Add the fresh coriander and truffle oil, mix and leave to steam for 5 minutes

  9. If you want the dahl to be creamy, add 2 tbsp of coconut milk/cream to the mix

  10. Serve with rice or bread of your choice with a salad or yoghurt & coconut yoghurt raita.
