Vegan ‘Roux’ Sauce

This beautiful smooth and creamy white sauce is the base to any good plant-based dish and especially for ‘mac’n’cheese’.

Here is how to make my version using ‘nutritional yeast’ instead of cheese.

Ingredients

3 tbsp vegan butter or sunflower oil
2 tbsp flour (I use self-raising flour). Gluten free flour works well also however use 3 tbsp GF flour as this is much finer
1 cup plant-based milk (I use soya or oat)
Salt & pepper to taste
Pinch of smoked paprika for added flavour
4 tbsp nutritional yeast OR 1/2 cup of good plant-based cheese, grated

Method

  1. Melt butter/oil in a non-stick saucepan

  2. Add the flour and bring together

  3. Slowly add the milk and whisk gently, mixing all the time. Keep adding milk until it has all been added and combined well into the flour mix to create a creamy texture

  4. Add salt & pepper

  5. Add nutritional yeast and smoked paprika

  6. If the mixture is too thick, add more milk. If the mixture is too runny, add a little more flour.

  7. Use in any dish that requires a white sauce: mac’n’cheese, cauliflower cheese, lasagne sauce etc.
