Veggie Burger

Delicious any time of year, especially now as the weather is starting to warm.

Packed full of delicious and nutritious plant-based protein.

What’s there not to love!

Makes 4 burgers

Ingredients

1 can black beans, drained and rinsed
1/2 cup quinoa, cooked
1/2 cup breadcrumbs (use gluten-free if needed)
1 cup finely sliced white cabbage (or 1 onion if preferred)
1 tsp truffle oil
1 tbs ground flaxseed mixed with 2.5 tablespoons water (flax egg)
1 tbs soy sauce or tamari
1 tsp smoked paprika
1/2 tsp cumin
Salt and pepper to taste
Olive oil for shallow cooking

Method

  1. In a large bowl, mash the black beans with a fork until mostly smooth, leaving some chunks for texture.

  2. Add cooked quinoa, breadcrumbs, cabbage, truffle oil, flax egg, soy sauce, smoked paprika, cumin, salt & pepper. Mix until well combined.

  3. Form the mixture into 4 patties.

  4. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.

  5. Serve on a toasted bun with your favourite toppings: lettuce, tomato, avocado, vegan cheese and a dollop of vegan mayo or mustard.
