Banana & Chocolate Cake
When you are craving something chocolatey with a hint of sweetness, this is the cake for you to try to make for yourself.
Being vegan doesn’t mean you cant enjoy delicious, soft and spongey cake.

Makes 8 slices
Ingredients
Dry Ingredients
2. 5 cups self-raising flour
1/2 cup brown / coconut sugar
1/2 cup cocoa powder (no added sugar)
2 tbsp baking powder
1 tsp cinnamon powder or pumpkin spice powder
Wet Ingredients
1 cup plant milk of your choice (I used soya)
2 tsp cider vinegar
4 tbsp sunflower / coconut oil
Pinch of sea salt
3 ripe bananas, mashed
1/2 cup dark vegan chocolate (nibs or chunks)
Method
Pre-heat oven to 180C/360F
Spray oil a loaf pan (approx. size 9 x 5)
In a bowl, mix all the dry ingredients
In a small measuring jug add the milk and vinegar and leave to one side for 10 minutes
Mash the bananas and leave to one side
Mix the dry and wet ingredients together including the dark chocolate and empty into the loaf pan
Bake in the oven for 45 minutes, checking it with a knife to ensure it comes out clean before taking out of the oven
Leave to cool before slicing and enjoying
Optional extras:
This is not an overly sweet cake. If you want more sweetness, add another 1/2 cup of sugar OR 1/4 cup maple syrup or 8 pitted dates
If you like your cake nutty, add 1/4 cup of chopped walnuts
