BBQ Vegetables Kebabs

To enjoy some of the wonderful and colourful in season fruit & veggies, get creative using some fresh vegetables on the BBQ.

Remember, although veggies taste great on their own, they taste even better using delicious marinades.

Here is our favourite BBQ combination for you to try.

  • Courgette

  • Peppers

  • Aubergine

  • Mushrooms (portobello, oyster & shiitaki work well)

  • Tomatoes

  • Tofu or tempeh (*plant-based protein)

  • Baby corn or corn on the cob

Cut all of the veggies into bite size pieces and add to a big bowl.

Lemon & Saffron Marinade

  • 2 tbsp olive oil

  • 1 tsp truffle oil

  • Pinch of saffron

  • 2 tbsp hot water (this helps dissolve the saffron)

  • Juice from 2 lemons/limes

  • Sea salt & pepper to taste

  • 1 tsp dried oregano

    Instructions:

    1. Marinade the vegetables in the dressing and leave for a minimum of 2 hours (ideally overnight will work best to get maximum flavour)

    2. When ready to BBQ, add the veggies to bamboo skewers and grill until ready

    3. Serve with a baby potato salad or with sweet potato fries/wedges.

Don’t forget, that if you have any left overs, these taste great the next day added in a nice big salad.

You can add some of your favourites fruits onto skewers and also BBQ them for the perfect finish. Top with some coconut yoghurt mixed with a sprinkle of cinnamon powder and a drizzle of maple syrup or if you want something frozen, serve with frozen banana ice-cream.

PS. Try to create your own BBQ by using whole ingredients and fresh home-made marinades instead of shop bought burgers, sausages and sauces as they do all contain high levels of sugar, salt & fats and heavily over processed that the body struggles to digest!
