Creamy Tomato Soup
Regardless of the weather, hot or cold, this soup is light and refreshing and quick to whip up when you need something delicious and nutritious. This soup is also great when you are running low on supplies as most of us have a can of beans and tomato in our store cupboard.

Serves 2/4 (main/side)
Ingredients
- 1 can of chopped tomatoes
- 2 cups of vegetable broth
- 1 cup of unsweetened almond or coconut milk
- 1 tsp truffle oil
- 1 can of your favourite beans drained (I love chickpeas or black beans - whatever you have available)
- Salt and pepper to taste
Method
Add all the ingredients and only 1/2 the can of beans to a saucepan and bring to boil
Turn heat down and simmer gently for 20 minutes
Using a hand held blender, blend until you get a smooth texture
Add the rest of the beans and warm through before serving
Garnish with fresh basil leaves
