Broccoli, Apple & Red Pepper Salad

This dish is so simple to make, and is inspired by using my Thermomix (which is where this recipe came from). It is light, tasty and refreshing and makes great use of this delicious and nutritious green vegetable, which has many health benefits.

Serves 4

Ingredients

  • 300g broccoli florets

  • 1 red pepper cut in pieces

  • 1 apple peeled, cored and cut in pieces

  • 30 g pine nuts or sunflower seeds (ideally roasted as it gives it a depth of flavour)

  • 20 g olive oil

  • 15 g cider vinegar
    or white balsamic vinegar

  • 1 tsp honey

  • 1 ½ tsp mustard

  • 1 tsp fine sea salt

  • ½ tsp ground black pepper

Optional extras:
- Handful of dried cranberries
- 1 can of your favourite beans for your plant-based protein
- Fresh coriander to garnish

Method

  1. Please ALL the ingredients in your Thermomix, and chop for 7 sec/speed 4. Serve at room temperature.

  2. If you don’t have a Thermomix, whisk up the dressing ingredients in a small bowl and leave to one side before adding all the veggies into a food processor/chopper to chop to bite-size pieces (or cut up by hand)!
