Tofu Scramble

This is a delicious recipe made with tofu, a great source of plant-based protein that can be enjoyed on toast, as a filling to sandwiches and jacket potatoes and even in addition to salads.

To serve 4

Ingredients

1 block extra firm tofu (approx. 200g), scrambled with a fork or grated
1/2 cup mixed coloured peppers, diced (optional)
1/2 tsp turmeric
1/2 tsp black salt (namak)
2 tbsp soya sauce (tamari or Braggs)
Black pepper to taste
2 tbsp olive or sunflower oil

Method

  1. In a frying pan, add the oil, turmeric, black pepper, soya sauce before adding the peppers

  2. Mix for 3-4 minutes

  3. Add tofu, mix and cook through for about 10 minutes

  4. Add the black salt and mix for another minute

  5. Once ready, top on toast and enjoy with a side of avocado
