Cassava Naan

This tasty yet nutritious root vegetable is so versatile that it can be enjoyed as a vegetable, made into tasty crisps for healthy snacking as well as into bread (naan, wraps and crackers).

Here is my recipe, which make 6 small size wraps

Ingredients

1 cup cassave flour
1/4 tsp sea salt
1 tbsp ground flax seed mixed with 6 tbsp cold water (used as a binder)
1/2 cup cold water (use more if needed to bring mixture together)

Method

  1. Mix the flaxseeds with water and leave to one side for 10 minutes

  2. Mix all the ingredients together in a bowl and bring the mixture together (make sure it is not too sticky. If it is, add more cassava flour, if too dry add a little more water)

  3. Put in the fridge for 10 minutes so that the mixture firms up

  4. Remove from fridge and make 6 small balls

  5. Heat a large frying pan

  6. Meanwhile, take 2 sheets of baking paper and add one ball at a time between the baking sheet and start to gently roll out to a small wrap size

  7. Gently remove the wrap and place in the frying pan

  8. Cook for about 10 minutes, regularly turning over until both sides look cooked

  9. Serve with our delicious ‘Spinach and Yellow Lentil Dahl’
