Chocolate ‘Salami’
This is such a delicious treat to enjoy and such a fun activity to get the kids involved in making.
No cooking required.
Makes 1 roll (approx. 10-14 slices depending on thickness)
Ingredients
100g nuts of your choice (I use walnuts and hazelnuts mixed however any nut works)
4 tbsp cocoa powder
75g almond flour
3 tbsp maple syrup
1 tbsp coconut oil
4 mejdool dates, stone removed and torn into pieces/chopped
2 vegan shortbread cookies (store bought or home-made), crushed
Method
Using a food processor or blender, add the nuts, cocoa powder, almond flour, maple and coconut oil and blitz until they have come together and slightly sticky
Empty contents into a mixing bowl
Add the cookies and dates and mix well until it comes together
Take a long piece of clingfilm or baking paper, empty the contents in the centre, seal all sides and shape into a long sausage/salami shape and keep rolling until you have a firm shape
Allow to set in the fridge for 1 hour (the longer the better) and once ready to enjoy, remove from the fridge, slice and enjoy.
For that extra salami look, sprinkle some icing sugar over the top!
PS. You can add any ingredient combination you like i.e. dried fruit and nut (cranberries are great and look colourful) as well as adding a few whole nuts (hazelnuts) for texture. Get creative and try out a few different varieties, flavours and textures!
