Yule Log

Make our easy and delicious chocolate yule log in time for the festive season.

Makes 8 slices

Ingredients

Dry Ingredients
230g self-raising flour (gluten-free flour works well too)
30g cocoa powder
140g caster sugar
1/4 tsp baking soda
1/4 tsp baking powder
Pinch of salt

Wet Ingredients
200ml plant-based milk of your choice mixed with 3 tsp vinegar (leave to one side to curdle for 10 minutes - this creates your ‘buttermilk’ that in turn makes your sponge light and fluffy)
70ml sunflower oil

Chocolate Buttercream ingredients
1 cup icing sugar
1/2 cup dairy free butte
1 tsp vanilla essence
4 tbsp cocoa powder
2-4 tbsp plant-based milk

Icing sugar for decoration

Method

  1. Pre-heat oven to 180C/360F

  2. Mix all the dry ingredients together

  3. Mix the milk and vinegar together and once curdled (after 10 minutes) add to the dry ingredients along with the sunflower oil

  4. Using a loaf baking tin, grease the base and sides and add the cake mixture into the pan

  5. Bake in the oven for 25 minutes

  6. Leave the cake to completely cool before adding buttercream and decorating

  7. Add all the buttercream ingredients to a food processor/mixer and ONLY 2 tbsp of the milk and mix. If too dry, add more milk, if too wet add more icing sugar. Mix until you have the right thick consistency for buttercream

  8. Once the cake has cooled down, taking a sharp knife, slice the cake lengthways down the middle so you have 2 halves. Fill the bottom half with buttercream, put on the top half of the cake and continue to put the buttercream on the top and sides of the cake until completely covered

  9. Once the cake is covered with buttercream, take a fork and gently scrape the top and sides to create a ‘log’ like effect (see picture)

  10. Sprinkle with icing sugar and decorate with fresh or dry mistletoe or any decoration you wish
