Kale & Apple Salad

This is a light and delicious salad definitely worth a go during the Summer months.

Serves 2


- 1 bunch of kale, stems removed and chopped

  • 1 avocado, diced

  • 1 bunch of kale, stems removed and chopped

  • 1/4 cup of sliced almonds or any nuts/seeds of your choice (toasted for that extra bite and earthy flavour)

  • 1/4 cup of dried cranberries

  • 1/4 cup of crumbled vegan feta cheese (Vio-life)

  • 2 tablespoons of olive oil

  • Juice from 1 lemon

  • 1 apple, skin and core removed and sliced/diced (your choice)

  • Salt and pepper to taste

  • 1 cup pomegranate (optional)

Method

  1. Massage the kale with olive oil and lemon juice for a few minutes to soften

  2. Add the diced avocado, apples, sliced almonds, dried cranberries and crumbled feta cheese

  3. Season with salt and pepper to taste. Enjoy!
