Kale & Apple Salad
This is a light and delicious salad definitely worth a go during the Summer months.
Serves 2
- 1 bunch of kale, stems removed and chopped
1 avocado, diced
1 bunch of kale, stems removed and chopped
1/4 cup of sliced almonds or any nuts/seeds of your choice (toasted for that extra bite and earthy flavour)
1/4 cup of dried cranberries
1/4 cup of crumbled vegan feta cheese (Vio-life)
2 tablespoons of olive oil
Juice from 1 lemon
1 apple, skin and core removed and sliced/diced (your choice)
Salt and pepper to taste
1 cup pomegranate (optional)
Method
Massage the kale with olive oil and lemon juice for a few minutes to soften
Add the diced avocado, apples, sliced almonds, dried cranberries and crumbled feta cheese
Season with salt and pepper to taste. Enjoy!
