Miso Glazed Brussel Sprouts

Brussel sprouts are now in season and plentiful. Wherever we turn, these beautiful green balls of nutrition are everywhere and what better way to enjoy them then with another fully loaded nutritious ingredient - MISO!

Miso helps the body maintain nutritional balance. It is loaded with other nutrients along with its beneficial bacteria and enzymes. Miso provides protein, vitamin B12, vitamin B2, vitamin E, vitamin K, choline, linoleic acid, lecithin, and dietary fiber. It aids in digestion too.

Brussels sprouts are high in fibre, vitamins, minerals and antioxidants, making them a nutritious addition to your diet. They may also come with added health benefits, including the potential to decrease inflammation and improve blood sugar control.

So to combine these 2 ingredients makes a super nutritious and powerful dish that will keep both your taste buds and gut healthy!

To serve 6 as a side dish

Ingredients

4 cups of Brussel sprouts, outer layers removed and stalk trimmed
1 tbsp coconut/sunflower oil
Pinch of sea salt
1/2 tsp black pepper
1/4 tsp chilli flakes (optional)
1/4 tsp smoked paprika (optional)

Miso Glaze
2 tbsp miso paste (of your choosing)
2 tbsp apple cider vinegar
1 tbsp maple syrup
Pinch of sea salt
1 tsp truffle oil

Method

  1. Preheat oven to 190C/380F

  2. Add all the Brussel ingredients into a mixing bowl and mix well

  3. In a separate bowl, add all the miso glaze ingredients

  4. In a large deep frying pan, add the Brussel sprouts with the sauce/oils and fry on medium high heat for 5-8 minutes, making sure they get a nice brown coating (not black/burnt). Don’t worry if they start to smoke - this adds to the smokiness flavour of the sprouts.

  5. Put the Brussel sprouts in the bowl with the miso glaze, mix well.

  6. On a flat baking tray, put a sheet of baking paper and evenly layout the Brussel sprouts

  7. Bake in the oven for 20 minutes, turning half way through until golden crisp!
