Peanut Butter Satay Sauce

I recently made this sauce to go with baked tofu and it was the favourite of many of those who enjoyed it so I wanted to share this delicious, quick and easy recipe with you.

Ingredients

1/2 cup peanut butter (almond butter works just as well) - you can use smooth or crunchy nut butter - whichever you prefer
1/2 cup coconut milk
2 tbsp soya sauce/tamari
2 tbsp maple syrup
2 tbsp lemon or lime juice
1/4 cup water
Optional: pinch of dried chilli flakes or 1/2 fresh red chilli deseeded and finely sliced
Optional: 1 tsp truffle oil

Method

  1. In a non-stick saucepan, add all the ingredients and whisk with a handheld whisk over a low heat until the mixture forms a smooth paste

  2. Enjoy over baked/fried tofu or veggies to create that perfect dish served with rice or noodles.

NB: If you are making this sauce in advance, keep it in the fridge for up to 3 days. When you want to use it, you will need to add some water to the mix, warm it through until you get to a smooth consistency, then serve and enjoy.
