Overnight Soaked Oats Recipe

This is a great choice when you are either a) not energetic in the mornings b) don’t have time (need to head to the office, get the kids to school or have a busy day ahead).

It is a simply recipe requiring minimal effort and so tasty as you can make it exactly how you like it and of course you can make a few batches at a time as, when kept in the fridge, the oats will keep fresh for 3 days.

Serves 2

Ingredients

1 cup oats (you can use gluten free oats if desired)
2 cups plant based milk (I use oat)
1/2 cup frozen berries (mixed or berry of your choice)
2 tbsp seeds of your choice (sunflower, pumpkin, sesame)
1 tbsp of chia seeds (for protein and added nutrition)
1/4 cup yoghurt (I use coconut for add sweetness and flavour)
Pinch of cinnamon
Pinch of sea salt
2 tbsp maple syrup (optional)

Method

1.    The night before the morning you would like to enjoy these oats, in a mixing bowl add all the ingredients, mix and then put in a container that has a cover to keep in the fridge overnight. You can put them in 2 separate containers with lids for ease of ‘grab’n’go’ in the morning. Store in fridge overnight.

2.    In the morning you can enjoy your porridge as it is, after giving it a mix, or add some fresh berries, banana, a handful of your favourite nuts/seeds, nut butter and a drizzle of maple syrup if desired.

This dish is really versatile where you can add pretty much what you like to it to make it tasty and nutritious.
