Plain Scones

Makes: 8 scones
Prep Time: 15 minutes
Cook Time: 15-18 minutes

Ingredients:

  • 2 cups all-purpose flour/self-raising flour

  • 2 tablespoons sugar (or your preferred sweetener)

  • 1 tablespoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup cold plant-based butter cut into cubes

  • 3/4 cup plant-based milk (such as almond, soy, or oat milk), plus extra for brushing

  • 1 teaspoon vanilla extract (optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 190C/380F. Line a baking sheet with parchment paper.

  2. Mix Dry Ingredients:

    • In a large bowl, mix together the flour, sugar, baking powder, and salt.

  3. Cut in the Butter:

    • Add the cold plant-based butter cubes to the flour mixture. Using your fingertips to work the butter into the flour until the mixture resembles coarse crumbs. It’s okay if there are a few larger pieces of butter; this will help create flaky scones.

  4. Add Wet Ingredients:

    • Pour in the plant-based milk and vanilla extract (if using). Stir until the dough just comes together. Be careful not to over mix—the dough should be slightly sticky.

  5. Shape the Dough:

    • Turn the dough out onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a circle about 1 inch thick.

  6. Cut the Scones:

    • Use a sharp knife to cut the dough into 8 wedges, or use a round cookie cutter to cut out individual scones. Place the scones on the prepared baking sheet.

  7. Brush and Bake:

    • Brush the tops of the scones with a little plant-based milk to help them brown. Bake in the preheated oven for 15-18 minutes, or until the scones are golden brown on top.

  8. Cool and Serve:

    • Allow the scones to cool slightly on a wire rack. Serve warm or at room temperature with your favourite plant-based butter, jam, or a drizzle of agave syrup.

If you want to make savoury scones, simply add 1/4 cup of your favourite plant-based cheese, grated, to the mix and keep a few sheds to add to the top of the scones before baking.

You can also add 1/4 cup of mixed fruits (raisins, sultanas etc) to the mix before baking.
