Strawberry & Chia Jam
Makes: About 1 cup

Cook Time: 10 minutes
Setting Time: 1 hour (or overnight)
Ingredients:
2 cups fresh strawberries, hulled and chopped
2-3 tablespoons maple syrup or agave syrup (adjust to taste)
2 tablespoons chia seeds
1 teaspoon lemon/lime juice (optional, for a bit of tang)
Instructions:
Prepare the Strawberries:
Place the chopped strawberries in a medium saucepan over medium heat. Cook for about 5-7 minutes, stirring occasionally, until the strawberries break down and become soft and juicy.
Mash the Strawberries:
Use a potato masher or the back of a spoon to mash the strawberries to your desired consistency. You can leave some chunks if you prefer a chunky jam.
Sweeten the Jam:
Stir in the maple syrup or agave syrup (or sweetener of choice), adjusting the sweetness to your taste. Add the lemon juice if you want a bit of tanginess.
Add the Chia Seeds:
Remove the saucepan from heat and stir in the chia seeds. Mix well until the chia seeds are evenly distributed throughout the mixture.
Let the Jam Thicken:
Allow the jam to sit for about 5 minutes, then give it another good stir. The chia seeds will start to absorb the liquid and thicken the jam.
Cool and Set:
Transfer the jam to a clean jar or container. Let it cool to room temperature, then refrigerate for at least 1 hour (or overnight) to allow it to fully set.
Serve:
Enjoy your homemade strawberry and chia seed jam on toast, with scones, in yogurt, or however you like!
Storage:
Store the jam in an airtight container in the refrigerator for up to 1 week.
