World Nutella Day 5th February

Ok, who doesn’t love chocolate? Or nuts? And together?

Yes definitely a match made in heaven! They make a magical and delicious ‘spread’ that can be enjoyed in a number of ways (resist it straight out of the jar)!

The original ingredients of ‘Nutella’ includes milk powder which makes it a ‘no-no’ for us vegans however there are now numerous vegan options out there on the market for us to enjoy.

However why not have a go at making your own jar, full of goodness, which is certainly healthier and better for you than the shop bought variety.

Here is my recipe to create your own jar of chocolatey and nutty goodness.

Ingredients

  • 400g hazelnuts

  • 100g dark (vegan) chocolate

  • 2 tbsp melted coconut oil

  • 6 dates or 6 tbsp maple syrup

  • 125ml hazelnut milk (or plant-based milk of your choice)

  • 2 tsp vanilla essence

  • Pinch of sea-salt

Method

  • Pre-heat oven to 180C/360F

  • Spread out the hazelnuts on a baking tray to dry roast for 20 minutes

  • Remove from oven and put in a high speed blender and mix until you have a smooth ‘nut butter’ texture (you will need to stop the blender and scrape down the sides to ensure all the nuts are included in the mix)

  • In a bain marie (bowl over hot water) melt the chocolate and coconut oil together until smooth

  • Add ALL the ingredients into the blender and mix until you have a smooth texture (you may like it thick or smoother so mix to your preferred taste)

  • Transfer to a glass jar or container and enjoy

This jar of chocolatey goodness will keep for a month if stored in a cool area (store cupboard), if it lasts that long!

Spread on toast, on pancakes, use as a dip for fresh berries or fruits as well as melted down to a smooth sauce (by adding more plant-based milk) and drizzled over cakes, fruits etc.
