Mushroom Pate

During the festive season we are looking for delicious, quick and easy recipes to tantalise our taste buds with especially when it comes to entertaining family and friends. This is the perfect recipe just for this!

This is a great filling for sandwiches filled with lots of fresh salad leaves and veggies as well as a dip with crudités and crackers!

Ingredients

2 cups mixed mushrooms, roughly chopped
1 can of your favourite beans, drained
1 cup walnuts
1/4 cup fresh parsley
Pinch of dried or fresh thyme (1tbsp)
Good amount of freshly ground black pepper
1 tbsp olive oil
2 tbsp soya sauce or tamari
½ tsp truffle oil
1 full tbsp melted vegan butter 

Method

  1. In a frying pan, using the olive and truffle oil, start to sauté the mushrooms and thyme, adding in the black pepper

  2. Put all ingredients (except the butter) in a food processor and blitz until you have a thick smooth consistency or keep the texture rough – whichever you prefer.

  3. Empty the pate contents into glass jars.

  4. Melt the vegan butter and gently pour over the pate.

  5. Put in the fridge to cool and until you are ready to serve

  6. Serve with toasted bread or crackers and a chutney of your choice with a side of fresh salad veggies.
