Sabzi Polo (Herby Rice)

This dish is enjoyed by Persians all year round but especially during the time or Nowruz, which celebrates the start of Spring.

It is a healthy and nutritious dish full of fresh herbs and is quick and easy to make.

Serves 4

Ingredients

2 cups Basmati rice, washed until water runs clear
1 cup fresh coriander, washed and finely chopped
1 cup fresh parsley, washed and finely chopped
1/4 fresh or dried fenugreek, washed and finely chopped
1 tsp sea salt
1 tbsp vegan butter melted
1 tbsp olive or coconut oil
Pinch of saffron

Method

  1. Boil the rice with about 6 cups of water and salt in a non stick saucepan for 15 minutes

  2. Drain the rice in a colander keeping 1/4 cup of the rice water

  3. Back in the saucepan, add the rice water, oil and a pinch of salt and start to layer back in the rice first, then some of the fresh herbs (combined) and repeat this process until all ingredients are finished

  4. Add 4 tbsp of just boiled water with a sprinkling of sea salt, vegan butter and a pinch of saffron

  5. Cover and steam to cook for 30 minutes
